JOB DESCRIPTION
PURPOSE OF THE POSITION:
The University of Maryland Football Sports Nutrition Unit is currently accepting applications for an internship working within our new Football Facility. This will be a paid learning experience with no medical benefits. The position will report to the Director of Football Sports Nutrition. This position will work directly in the Jones Hill Dining Facility to support the Executive Chef, Sous Chef, and kitchen staff to maximize player health and performance through the creation of nutritionally optimal meals and snacks, and other duties assigned.
SCHEDULE:
The internship will begin June 2024 with flexible end date (6 months minimum; 1 year preferred)
Typical work days are Monday – Saturday but may include periodic weekend days.
Internship experience will include working home and away football games.
ESSENTIAL DUTIES & RESPONSIBILITIES:
Intern will take direction from the Director of Football Sports Nutrition and work directly in the Jones Hill Dining Facility to support the Executive Chef, Sous Chef, and kitchen staff to maximize player health and performance through the creation of nutritionally optimal meals and snacks
Collaborate with team dietitians as a multi-disciplinary team member of the performance nutrition department and advise on culinary methods and techniques for meals related to the athletes’ needs
Intern will assist with day-to-day operations and facilities management of an active sports kitchen and fueling station
Work with the Executive and Sous Chef to integrate high nutritional value into menu items through ingredient utilization and cooking methods without compromise to taste, quality or presentation
Understand requirements from the Director of Football Sports Nutrition regarding individualized needs, allergies, body composition, periodization, portions, specialized diets, etc for the purpose of menu development and meal plan execution
Intern will help develop menus and recipes with a focus on nutrient dense foods to optimize player health and performance
Help maintain immaculate standards of work area, both front and back of house
Offer education to players, coaches and staff on culinary performance methods and techniques, as well as product sourcing on an as needed basis
Advise and help execute meals for teams around competition at hotels and potential for away game experience
Work alongside sports nutrition staff to provide counseling and educational services to the student-athlete
MINIMUM QUALIFICATIONS:
Education:
Bachelors’ degree in culinary arts, nutrition, food science, and/or related field
Combination of culinary arts and nutrition/dietetics preferred
Preferred Experience, Knowledge, Skills and Abilities:
Experience working with athletes and in food service.
Outstanding knowledge of and skill in culinary arts
Ability to collaborate with a diverse multi-generational, multi-skilled culinary team.
Strong oral and written communication skills and guest service skills.
Understanding of and skill in the principles of food selection, ordering, preservation, preparation, service, and inventory control.
Outstanding knowledge of food safety, food preparation and service, menu and recipe development, and food and dining trends.
Strong organizational and logistics skills.
Ability to work effectively and collaboratively with a diverse team.
PHYSICAL DEMANDS:
A moderate physical effort and levels of dexterity, including but not limited to:
The ability to stand for long periods of time; and
The ability to move items weighing up to 50 pounds
The ability to work nontraditional hours
